Ingredients

  • Β½ cup powdered peanut butter
  • ΒΌ cup all-purpose flour
  • ΒΌ cup calorie-free granulated sweetener
  • 1 large egg white
  • 2 tbsp unsweetened applesauce
  • 1 tsp vanilla extract
  • ΒΌ tsp baking soda
  • β…› tsp salt
  • 1–2 tbsp water, only if needed

Method

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment.
  2. Whisk powdered peanut butter, flour, sweetener, baking soda, and salt.
  3. Stir in egg white, applesauce, and vanilla until a soft dough forms. Add water gradually if needed.
  4. Divide into 16 equal portions, roll into balls, and place on the baking sheet.
  5. Flatten each with a fork in a crisscross pattern.
  6. Bake for 8–10 minutes, until the edges are set but the centers are still slightly soft.
  7. Cool on the baking sheet for 5 minutes, then transfer to a rack.
