Ingredients
- Β½ cup powdered peanut butter
- ΒΌ cup all-purpose flour
- ΒΌ cup calorie-free granulated sweetener
- 1 large egg white
- 2 tbsp unsweetened applesauce
- 1 tsp vanilla extract
- ΒΌ tsp baking soda
- β tsp salt
- 1β2 tbsp water, only if needed
Method
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment.
- Whisk powdered peanut butter, flour, sweetener, baking soda, and salt.
- Stir in egg white, applesauce, and vanilla until a soft dough forms. Add water gradually if needed.
- Divide into 16 equal portions, roll into balls, and place on the baking sheet.
- Flatten each with a fork in a crisscross pattern.
- Bake for 8β10 minutes, until the edges are set but the centers are still slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a rack.
