Ingredients

  • 4 tbsp all-purpose flour
  • 1Β½ tbsp granulated sugar
  • ΒΌ tsp baking powder
  • Pinch of salt
  • 3 tbsp unsweetened plant-based milk
  • 1 tbsp neutral-flavored vegetable oil
  • ΒΌ tsp vanilla extract
  • ΒΌ cup fresh or frozen mixed berries
  • Β½ tsp lemon zest, optional

Directions

  1. Prepare the mug: Use a microwave-safe mug with at least a 300 ml capacity. Lightly grease it if desired.
  2. Mix dry ingredients: Add flour, sugar, baking powder, and salt. Stir well.
  3. Add wet ingredients: Add plant milk, oil, vanilla, and lemon zest. Stir until smooth, making sure there is no dry flour at the bottom.
  4. Add berries: Gently fold in the berries, reserving a few for the top if desired.
  5. Microwave: Cook on high for about 60 seconds. Check the center and continue in 10–15 second intervals until puffed and set. Avoid overcooking.
  6. Rest: Let the cake sit for 1 minute before eating.
