Ingredients
- 4 tbsp all-purpose flour
- 1½ tbsp granulated sugar
- ¼ tsp baking powder
- Pinch of salt
- 3 tbsp unsweetened plant-based milk
- 1 tbsp neutral-flavored vegetable oil
- ¼ tsp vanilla extract
- ¼ cup fresh or frozen mixed berries
- ½ tsp lemon zest, optional
Directions
- Prepare the mug: Use a microwave-safe mug with at least a 300 ml capacity. Lightly grease it if desired.
- Mix dry ingredients: Add flour, sugar, baking powder, and salt. Stir well.
- Add wet ingredients: Add plant milk, oil, vanilla, and lemon zest. Stir until smooth, making sure there is no dry flour at the bottom.
- Add berries: Gently fold in the berries, reserving a few for the top if desired.
- Microwave: Cook on high for about 60 seconds. Check the center and continue in 10–15 second intervals until puffed and set. Avoid overcooking.
- Rest: Let the cake sit for 1 minute before eating.
