Ingredients (Serves 4)
- 1½ lb (700 g) baby potatoes, halved (leave very small ones whole)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp smoked paprika (optional)
- ¾ tsp salt
- ½ tsp black pepper
- 1 tbsp chopped fresh parsley (for garnish)
- Optional: grated Parmesan, lemon wedges, or minced fresh garlic
Instructions
- Prepare the potatoes
- Wash and dry the baby potatoes.
- Cut larger potatoes in half so they cook evenly.
- Season
- In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, rosemary, thyme, parsley, smoked paprika (if using), salt, and pepper until evenly coated.
- Air fry
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- Arrange the potatoes in a single layer in the basket. Cook in batches if necessary.
- Air fry for 18–22 minutes, shaking the basket every 6–8 minutes, until golden brown and crispy outside and tender inside.
- Finish
- Sprinkle with fresh parsley.
- For extra flavor, toss with grated Parmesan or a little minced fresh garlic during the last 2 minutes of cooking.
Tips
- For extra-crispy potatoes, soak the cut potatoes in cold water for 20–30 minutes, then dry thoroughly before seasoning.
- Don’t overcrowd the air fryer basket—air circulation is key to crispiness.
- Adjust cooking time depending on potato size. Very small potatoes may be done in 15–18 minutes.
