- 2 cups carrots, chopped

Instructions
- Preheat air fryer to 180°C.
- Rub beef with olive oil, salt, pepper, garlic powder, and paprika.
- Place beef in air fryer and cook for 10 minutes to sear.
- Remove beef and place it in an air fryer-safe pan or foil tray.
- Add carrots, potatoes, onion, garlic, and herbs around the beef.
- Pour beef broth into the tray.
- Cover loosely with foil.
- Air fry at 180°C for 40–50 minutes, turning the beef halfway through, until tender.
- Remove foil for the last 10 minutes to allow browning.
