Bake-Sale Famous Butterscotch Shortbread Cookies
🥣 Ingredients
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- ½ cup powdered sugar (or granulated sugar for a slightly crispier edge)
- 1 tsp pure vanilla extract
- 2 cups all-purpose flour
- ½ tsp salt
- 1 cup butterscotch chips
- ½ cup chopped pecans or toffee bits (optional, for extra crunch)
🔪 Instructions
- Cream Butter & Sugar: In a large bowl, beat the softened butter and powdered sugar together until smooth and creamy. Mix in the vanilla extract.
- Combine Flour: Gradually add the flour and salt, mixing on low speed until a soft dough forms.
- Fold in Mix-ins: Gently fold in the butterscotch chips and chopped pecans/toffee bits.
- Shape & Chill: Roll the dough into 1.5-inch balls and flatten them slightly with the palm of your hand onto a parchment-lined baking sheet. Chill the dough balls in the fridge for 20–30 minutes (this prevents them from spreading too thin).
- Bake: Bake at 350°F (175°C) for 12 to 14 minutes, or until the bottoms are lightly golden brown.
- Cool: Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to set completely.
Bake Sale Tip: Shortbread cookies stay soft and fresh for several days when stored in an airtight container, making them ideal to bake the night before any big event!
