🍌 Banana Oat Snack Cake

Ingredients

  • 1 cup mashed very ripe banana — about 2 medium bananas
  • 1 cup nonfat plain Greek yogurt
  • 2 large eggs
  • 1 cup rolled oats
  • ½ cup vanilla protein powder (about 45–50 g)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1–2 tbsp zero-calorie sweetener, optional
  • 2 tbsp unsweetened almond milk, optional, only if needed
  • Cooking spray

Optional add-ins:

  • 1 tbsp mini dark chocolate chips
  • 2 tbsp chopped walnuts

Directions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment and lightly spray it.
  2. Mash the bananas until mostly smooth.
  3. Mix wet ingredients: Add Greek yogurt, eggs, vanilla, and optional sweetener. Whisk until smooth and creamy.
  4. Mix dry ingredients: Combine oats, protein powder, baking powder, baking soda, cinnamon, and salt.
  5. Make the batter: Fold the dry ingredients into the wet mixture just until combined.
  6. Adjust consistency: The batter should be thick but spreadable. If it’s extremely thick, add almond milk 1 tablespoon at a time.
  7. Fold in chocolate chips or walnuts if desired.
  8. Spread evenly into the prepared pan.
  9. Bake for 25–30 minutes, until the edges are lightly golden and the center is set.
  10. Test with a toothpick—it should come out clean or with a few moist crumbs.
  11. Cool in the pan for 15–20 minutes, then transfer to a rack and cool before cutting into 9 squares.
