Ingredients
- 1 cup mashed very ripe banana — about 2 medium bananas
- 1 cup nonfat plain Greek yogurt
- 2 large eggs
- 1 cup rolled oats
- ½ cup vanilla protein powder (about 45–50 g)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- 1 tsp vanilla extract
- 1–2 tbsp zero-calorie sweetener, optional
- 2 tbsp unsweetened almond milk, optional, only if needed
- Cooking spray
Optional add-ins:
- 1 tbsp mini dark chocolate chips
- 2 tbsp chopped walnuts
Directions
- Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment and lightly spray it.
- Mash the bananas until mostly smooth.
- Mix wet ingredients: Add Greek yogurt, eggs, vanilla, and optional sweetener. Whisk until smooth and creamy.
- Mix dry ingredients: Combine oats, protein powder, baking powder, baking soda, cinnamon, and salt.
- Make the batter: Fold the dry ingredients into the wet mixture just until combined.
- Adjust consistency: The batter should be thick but spreadable. If it’s extremely thick, add almond milk 1 tablespoon at a time.
- Fold in chocolate chips or walnuts if desired.
- Spread evenly into the prepared pan.
- Bake for 25–30 minutes, until the edges are lightly golden and the center is set.
- Test with a toothpick—it should come out clean or with a few moist crumbs.
- Cool in the pan for 15–20 minutes, then transfer to a rack and cool before cutting into 9 squares.
