Broccoli Bacon Cheddar Salad
Ingredients
- 2 large heads broccoli, cut into small florets (about 6 cups)
- 8 slices bacon, cooked and crumbled
- 1 cup sharp cheddar cheese, shredded
- ½ cup red onion, finely diced
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp apple cider vinegar
- 1 tbsp sugar or honey
- Salt and black pepper, to taste
Instructions
- Prepare the broccoli
- Wash and dry the broccoli thoroughly.
- Cut into bite-sized florets.
- Cook the bacon
- Fry bacon until crispy.
- Drain on paper towels and crumble.
- Make the dressing
- In a bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
- Assemble
- In a large bowl combine broccoli, bacon, cheddar cheese, and red onion.
- Pour dressing over the mixture and toss well.
- Chill
- Refrigerate for at least 1 hour before serving for the best flavor.
Optional Add-Ins
- ½ cup sunflower seeds
- ½ cup raisins or dried cranberries
- ¼ cup chopped pecans or almonds
- Diced hard-boiled eggs
If You Want It Baked (as a casserole)
- Preheat oven to 375°F (190°C).
- Mix:
- 6 cups broccoli florets (lightly steamed)
- 8 slices cooked bacon, crumbled
- 1½ cups shredded cheddar cheese
- 1 can cream of chicken soup
- ½ cup sour cream
- Spread into a baking dish.
- Top with extra cheese.
- Bake for 20–25 minutes until bubbly and golden.
