Broccoli Bacon Cheddar Salad

Ingredients

  • 2 large heads broccoli, cut into small florets (about 6 cups)
  • 8 slices bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup red onion, finely diced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tbsp sugar or honey
  • Salt and black pepper, to taste

Instructions

  1. Prepare the broccoli
    • Wash and dry the broccoli thoroughly.
    • Cut into bite-sized florets.
  2. Cook the bacon
    • Fry bacon until crispy.
    • Drain on paper towels and crumble.
  3. Make the dressing
    • In a bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
  4. Assemble
    • In a large bowl combine broccoli, bacon, cheddar cheese, and red onion.
    • Pour dressing over the mixture and toss well.
  5. Chill
    • Refrigerate for at least 1 hour before serving for the best flavor.

Optional Add-Ins

  • ½ cup sunflower seeds
  • ½ cup raisins or dried cranberries
  • ¼ cup chopped pecans or almonds
  • Diced hard-boiled eggs

If You Want It Baked (as a casserole)

  1. Preheat oven to 375°F (190°C).
  2. Mix:
    • 6 cups broccoli florets (lightly steamed)
    • 8 slices cooked bacon, crumbled
    • 1½ cups shredded cheddar cheese
    • 1 can cream of chicken soup
    • ½ cup sour cream
  3. Spread into a baking dish.
  4. Top with extra cheese.
  5. Bake for 20–25 minutes until bubbly and golden.

Serves: 6–8
Prep Time: 15 minutes
Cook Time (baked version): 25 minutes
