Broccoli Cheddar chicken rollups

These Broccoli Cheddar Chicken Rollups are seriously so good and surprisingly easy to throw together. If you need a solid weeknight meal that feels a bit fancy but isn’t a ton of work, this is it!

Ingredients:

4 boneless skinless chicken breasts (pounded thin)

2 cups fresh broccoli florets (chopped very small)

1 cup shredded cheddar cheese

4 oz cream cheese (softened makes it way easier)

1 tsp garlic powder

Salt and pepper (to taste)

1 tbsp olive oil (or cooking spray for the pan)

How I do it:

Ok so, first things first—get your oven preheated to 375°F and lightly grease a baking dish.

In a medium bowl, I just mix the chopped broccoli, shredded cheddar, cream cheese, and garlic powder. I usually just mash it with a fork until it looks right.

Lay your chicken breasts out and season both sides with salt and pepper.

Take a good spoonful of that broccoli mixture and spread it onto each piece of chicken. Don’t go too crazy or it’ll be hard to roll!

Roll them up tight—I start from the wide end—and place them seam-side down in your dish. You can use toothpicks to hold them if they’re being stubborn.

Brush the tops with a little olive oil if you want, then bake for 25–30 minutes. Just make sure the chicken is cooked through (depends on your oven and how thick your chicken is).

Notes / swaps:

If you don’t have fresh broccoli, you can use frozen! Just make sure it’s thawed and you squeeze all the extra water out so things don’t get soggy.

You can swap the cheddar for mozzarella or Monterey Jack if that’s what you have in the fridge.

Make sure to grease the pan well so nothing sticks.
