Carrot Cake Energy Bites

Ingredients (Makes 18–20 bites)

  • 1 cup old-fashioned rolled oats
  • ½ cup almond flour (or finely ground oats)
  • ½ cup shredded carrots (squeezed dry)
  • ¼ cup chopped walnuts or pecans
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp ground flaxseed (optional)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • ¼ cup almond butter or peanut butter
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2–3 tbsp raisins (optional)

Instructions

  1. In a large bowl, combine the oats, almond flour, carrots, walnuts, coconut, flaxseed, cinnamon, nutmeg, and salt.
  2. Add the almond butter, honey, and vanilla extract. Stir until everything is evenly mixed.
  3. Fold in the raisins, if using.
  4. If the mixture feels too dry, add 1–2 teaspoons of water or extra honey. If it’s too sticky, add a little more oats.
  5. Roll the mixture into 1-inch balls using your hands or a small cookie scoop.
  6. Place the bites on a tray or plate and refrigerate for 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.

Tips

  • Add 2 tablespoons of mini white chocolate chips for a cheesecake-inspired twist.
  • Stir in 1 tablespoon of chia seeds for extra fiber.
  • Roll the finished bites in shredded coconut or finely chopped pecans for added texture.
