Cheese and Bacon Butter Bath Scones

Ingredients

For the scones

  • 2 cups (250 g) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp sugar (optional)
  • 1 cup (120 g) shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • ¾ cup (180 ml) cold buttermilk (plus a little extra if needed)

For the butter bath

  • ½ cup (115 g) unsalted butter, melted
  • 1–2 tbsp chopped chives or green onions (optional)

Instructions

  1. Prepare the oven
    • Heat oven to 220°C (425°F).
    • Pour the melted butter into an 8-inch (20 cm) square baking dish or similar pan.
  2. Make the dough
    • In a bowl, whisk together flour, baking powder, salt, pepper, and sugar.
    • Stir in the cheddar cheese and crumbled bacon.
    • Add buttermilk and gently mix until a soft dough forms. Avoid overmixing.
  3. Shape the scones
    • Place the dough onto a lightly floured surface.
    • Pat into a thick square about 2–3 cm (¾–1 inch) thick.
    • Cut into 9 squares (or 8 wedges).
  4. Butter bath bake
    • Arrange the dough pieces in the melted butter, leaving a little space between them.
    • Sprinkle with chives if using.
    • Bake for 18–25 minutes, until golden brown and cooked through.
  5. Serve
    • Let cool for a few minutes.
    • Serve warm with extra butter, cream cheese, or alongside soup and salads.

Tips

  • Use sharp cheddar for the best flavor.
  • Don’t drain all the bacon fat before cooking the bacon—slightly crisp, flavorful bacon gives the scones a better taste.
  • For a spicy version, add a pinch of cayenne or diced jalapeños.
