Ingredients

Biscuit Dough

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional, balances flavor)
  • ½ cup cold unsalted butter, cubed
  • ¾ cup cold buttermilk (plus 1–2 tbsp if needed)

Cheese Filling

  • 1 ½ cups shredded mozzarella cheese (or cheddar, or mix)
  • ¼ cup cream cheese, softened (optional for extra creaminess)

Garlic Herb Butter

  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped (or 1 tsp dried)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a large bowl, mix flour, baking powder, baking soda, salt, and sugar.
  3. Cut in cold butter using a pastry cutter or fingers until mixture looks crumbly.
  4. Pour in cold buttermilk and mix gently until a soft dough forms. Do not overmix.

Step 2: Prepare Cheese Filling

  1. In a small bowl, combine shredded cheese and cream cheese (if using).
  2. Mix until slightly sticky so it holds together easily.

Step 3: Shape & Stuff Biscuits

  1. Scoop about 2 tablespoons of dough and flatten slightly in your palm.
  2. Place 1 tablespoon of cheese mixture in the center.
  3. Fold dough around the filling and seal tightly.
  4. Shape into a round biscuit and place on baking tray seam-side down.
  5. Repeat for all biscuits.

Step 4: Bake

  1. Bake for 15–18 minutes, or until biscuits are golden brown on top.

Step 5: Garlic Herb Butter

  1. While biscuits bake, mix melted butter, garlic, parsley, oregano, basil, salt, and pepper.
  2. Brush generously over hot biscuits as soon as they come out of the oven.

Serving

Serve warm so the cheese is gooey and stretchy inside. Perfect with soups, pasta, or as a party appetizer.


Storage

  • Store in an airtight container at room temperature for 1 day or refrigerate for up to 3 days.
  • Reheat in oven or air fryer for best texture.
