This is a hearty oven-baked comfort dish with juicy meatballs, savory mushrooms, fluffy rice, and a creamy cheesy sauce all baked together until golden and bubbling.

Ingredients

Meatballs

  • 500 g (1 lb) ground beef (or beef + pork mix)
  • 1 egg
  • ⅓ cup breadcrumbs
  • 2 garlic cloves, minced

  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons chopped parsley
  • 2 tablespoons grated Parmesan (optional)

Rice Base

  • 1 cup long grain rice (basmati or jasmine)
  • 2 cups chicken or vegetable broth
  • 1 tablespoon butter or olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced

Mushrooms & Veggies

  • 2 cups mushrooms, sliced (button or cremini)
  • 1 teaspoon olive oil or butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 1 cup spinach or peas

Cheesy Sauce

  • 1 cup milk (or half-and-half for richer version)
  • 1 cup shredded mozzarella
  • ½ cup cheddar cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon flour or cornstarch (for thickening)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano

Topping

  • ½ cup mozzarella cheese (for melting on top)
  • 2 tablespoons Parmesan cheese
  • Fresh parsley (for garnish)

Step-by-Step Instructions


1. Prepare the Meatballs

In a bowl mix:

  • ground meat
  • egg
  • breadcrumbs
  • garlic
  • spices
  • parsley
  • Parmesan

Mix gently (don’t overwork).

Form small meatballs (about walnut size).


2. Brown the Meatballs

Heat a skillet with a little oil.

Sear meatballs:

  • 5–7 minutes
  • until lightly browned (not fully cooked)

Set aside.


3. Cook Mushrooms

In same pan add butter/oil.

Cook mushrooms:

  1. half the rice
  2. mushrooms
  3. meatballs
  4. remaining rice
  5. pour cheesy sauce evenly over everything

7. Bake

Bake uncovered:

  • 25–30 minutes

Until:

  • cheese is melted and golden
  • sauce is bubbling
  • meatballs fully cooked (internal 165°F / 74°C)

8. Finish & Serve

Let rest 5–10 minutes.
