Chicken Gyro Pitas with Tzatziki

Ingredients

Chicken & Marinade

  • 700 g boneless skinless chicken thighs or breasts, sliced
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1–2 cloves garlic, finely minced
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • Salt and pepper, to taste

For Assembly

  • 4 pita breads (whole wheat or white)
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced
  • Optional: feta cheese, olives, pickled peppers

Instructions

Step 1: Marinate the chicken

In a bowl, mix:

  • Olive oil
  • Lemon juice
  • Garlic
  • Oregano
  • Paprika
  • Cumin
  • Salt
  • Pepper
  • Onion powder

Add chicken and toss to coat evenly.

Cover and marinate for:

  • At least 30 minutes (or up to 8 hours for deeper flavor)

Step 2: Prepare tzatziki sauce

Grate cucumber and squeeze out excess moisture using a clean cloth or paper towel.

In a bowl, combine:

  • Greek yogurt
  • Cucumber
  • Olive oil
  • Lemon juice
  • Garlic
  • Dill
  • Salt and pepper

Mix well and refrigerate until serving.


Step 3: Cook the chicken

Heat a skillet or grill pan over medium-high heat.

Cook chicken for:

  • 5–7 minutes per side

Until golden and fully cooked (internal temp 74°C / 165°F).

Let rest for 5 minutes, then slice if needed.


Step 4: Warm the pita

Warm pita bread in:

  • Dry skillet (30–60 seconds per side), or
  • Oven wrapped in foil at 180°C (350°F) for 5 minutes

Step 5: Assemble gyros

Layer inside pita:

  • Lettuce
  • Chicken
  • Tomato
  • Red onion
  • Tzatziki sauce

Add optional toppings if desired.

Fold and serve immediately.
