Classic Beef Fried Rice

Ingredients

Beef & Marinade

  • 1/2 lb (8 oz) flank steak or sirloin, cut into small bite-sized pieces
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1/2 tsp sesame oil

Fried Rice Base

  • 3 cups cooked long-grain white rice (preferably day-old and chilled)
  • 2 tbsp cooking oil (vegetable or canola)
  • 1/2 cup diced carrots
  • 1/2 cup frozen green peas
  • 1/2 medium red onion, cut into thick bite-sized chunks
  • 2 cloves garlic, minced
  • 2 green onions (scallions), thinly sliced
  • Fresh cilantro, chopped (for garnish)

Sauce

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce (for rich color)
  • 1 tbsp oyster sauce
  • 1 tsp toasted sesame oil
  • 1/4 tsp black pepper

Instructions

  1. Marinate the Beef: In a small bowl, toss the bite-sized beef pieces with 1 tablespoon of soy sauce, cornstarch, and 1/2 teaspoon of sesame oil. Let it sit for at least 10 minutes to tenderize.
  2. Prepare the Sauce: In a separate small bowl, whisk together the regular soy sauce, dark soy sauce, oyster sauce, sesame oil, and black pepper. Set aside.
  3. Sear the Beef: Heat 1 tablespoon of oil in a large wok or deep skillet over high heat. Add the marinated beef in a single layer and cook for 1-2 minutes per side until nicely browned and cooked through. Remove the beef from the pan and set it aside on a plate.
  4. Sauté the Vegetables: Add the remaining 1 tablespoon of oil to the hot wok. Add the diced carrots, red onion chunks, and green peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Fry the Rice: Add the chilled, cooked rice to the wok, using a spatula to break up any clumps. Pour the prepared sauce evenly over the top. Toss and stir-fry continually for 3-4 minutes until every grain of rice is evenly coated and toasted.
  6. Combine and Serve: Return the cooked beef to the wok along with the sliced green onions. Toss for 1 more minute until everything is well combined and heated through. Remove from the heat, garnish with freshly chopped cilantro, and serve immediately.
