Ingredients

Béchamel

  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • ¾ cup warm whole milk
  • Pinch of nutmeg
  • Salt and black pepper

Sandwiches

  • 4 thick slices white bread or sourdough
  • 2 tbsp softened butter
  • 1 tbsp Dijon mustard
  • 4–6 slices deli ham
  • 1½ cups shredded Gruyère or Swiss cheese
  • Green onion, optional

Directions

  1. Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in warm milk and cook 2–3 minutes, until thick. Season with nutmeg, salt, and pepper.
  2. Heat oven to 400°F (200°C) or set the broiler to high. Butter both sides of the bread and toast for about 3 minutes per side.
  3. Spread Dijon on two slices. Add half the cheese and the ham, then top with the remaining bread.
  4. Spread béchamel generously over the sandwiches and top with remaining cheese.
  5. Broil for 4–6 minutes, until melted, bubbly, and golden brown. Rest for 2 minutes, slice, and serve.
