Ingredients (2 servings)
- 1 cup full-fat coconut milk (well shaken)
- 1 cup coconut ice cream (or dairy-free vanilla ice cream)
- ½ cup ice cubes
- 2 tablespoons maple syrup or agave syrup (adjust to taste)
- ½ teaspoon vanilla extract
- 2 tablespoons unsweetened shredded coconut (optional)
- Pinch of salt

- Vegan whipped cream

Instructions
- Prepare ingredients
- Chill the coconut milk beforehand for the best texture.
- If using shredded coconut, lightly toast it in a dry pan for 2–3 minutes until golden.
- Blend
- Add the coconut milk, coconut ice cream, ice cubes, maple syrup, vanilla extract, shredded coconut (if using), and salt to a blender.
- Blend on high speed for 30–60 seconds until completely smooth and creamy.
- Taste and adjust
- For a sweeter shake, add more maple syrup.
- For a thicker shake, add extra ice cream.
- For a thinner shake, add a splash of coconut milk.
- Serve
- Pour into chilled glasses.
- Top with toasted coconut flakes, vegan whipped cream, or a drizzle of syrup if desired.
- Serve immediately.
