Wet Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup melted butter or coconut oil
- ⅓ cup monk fruit or erythritol sweetener
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
Dry Ingredients
- 1½ cups almond flour
- ¼ cup vanilla or unflavored protein powder
- 2 tbsp coconut flour
- 1 tsp baking powder
- pinch of salt
Optional Lemon Glaze
- ¼ cup powdered monk fruit sweetener
- 1–2 tsp lemon juice
Instructions
1. Prep
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
2. Blend Cottage Cheese
Blend cottage cheese until smooth.
This helps create a softer cookie texture.
3. Mix Wet Ingredients
In a bowl combine:
- blended cottage cheese
- eggs
- butter
- sweetener
- vanilla
- lemon juice
- lemon zest
4. Add Dry Ingredients
Mix in:
- almond flour
- protein powder
- coconut flour
- baking powder
- salt
Stir until a soft dough forms.
Let dough rest 5 minutes to thicken.
5. Shape Cookies
Scoop dough onto baking sheet.
Flatten slightly with the back of a spoon.
6. Bake
Bake 12–15 minutes until:
- lightly golden on edges
- centers are set
Cool completely.
Optional Glaze
Mix powdered sweetener with lemon juice.
Drizzle over cooled cookies.
