Creamy Slow Cooker Crack Chicken Soup

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 oz (1 packet) ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 can (14.5 oz) diced tomatoes, drained (or fire-roasted tomatoes)
  • 8 oz cream cheese, softened and cubed
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Fresh parsley or green onions for garnish

Instructions

  1. Combine Base: Place chicken breasts at the bottom of a slow cooker. Add chicken broth, ranch seasoning packet, garlic powder, onion powder, and diced tomatoes.
  2. Slow Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  3. Shred Chicken: Remove chicken breasts, shred using two forks, and return the meat to the slow cooker.
  4. Melt Cheese: Add the softened cream cheese, heavy cream, and shredded cheddar. Stir well, cover, and cook on HIGH for 15–20 minutes until melted and smooth.
  5. Serve: Stir in cooked bacon bits. Ladle into bowls and top with fresh chopped parsley or green onions.
