Rich, creamy, cheesy, and loaded with tender shredded chicken and crispy bacon. This easy slow-cooker soup is perfect for a cozy dinner.

Ingredients

  • 1½ lb (700 g) boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 packet (1 oz) ranch seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 can (14.5 oz) diced tomatoes, drained
  • 8 oz cream cheese, softened and cubed
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Fresh parsley or green onions, for garnish

Directions

  1. Place chicken in the slow cooker. Add broth, ranch seasoning, garlic powder, onion powder, and tomatoes.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
  3. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  4. Add cream cheese, heavy cream, and cheddar. Cover and cook on HIGH for 15–20 minutes, stirring until smooth and creamy.
  5. Stir in the crumbled bacon.
  6. Ladle into bowls and garnish with parsley or green onions.
