Crispy Baked Seasoned Chicken Wings

Wings & Coating
- 3 lbs chicken wings (flats and drumettes, split and tips removed)
- 1 tbsp aluminum-free baking powder (essential for crispy skin)
- 1 tbsp olive oil or vegetable oil
Seasoning Rub
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp dried oregano or Italian seasoning
- 1/2 tsp cayenne pepper or chili powder (optional, for heat)
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Prep the Oven & Pan: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil and place a wire oven-safe baking rack on top. Lightly spray the rack with non-stick cooking spray.
- Dry the Wings Thoroughly: Pat the chicken wings completely dry with paper towels (removing all moisture ensures maximum crispiness).
- Toss with Coating & Seasoning: In a large bowl, whisk together the baking powder, garlic powder, onion powder, smoked paprika, oregano, cayenne, salt, and black pepper. Drizzle the oil over the dry wings, then toss them in the seasoning mix until evenly coated.
- Arrange on Rack: Place the seasoned wings on the wire rack in a single layer, making sure they do not touch each other.
- Bake: Bake for 25 minutes, then carefully remove the pan and flip each wing over. Return to the oven and bake for another 20–25 minutes until the skin is deep golden brown, crispy, and the internal temperature reaches 165°F (74°C).
- Serve: Transfer the wings to a large glass dish or platter. Serve hot as-is for dry-rub wings, or toss with your favorite buffalo, BBQ, or garlic parmesan sauce.
