Crispy Chicken & Cheese Fritters

  • 3 tbsp all-purpose flour (or cornstarch for extra crispiness)
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill or parsley, finely chopped (plus extra for garnish)
  • Salt and black pepper to taste
  • 2-3 tbsp olive oil or vegetable oil (for frying)

Step-by-Step Instructions

  1. Prep the Chicken: Cut the chicken breasts into very small, bite-sized cubes (about 1/4-inch thick). Place them into a medium mixing bowl.
  2. Mix the Batter: To the bowl with the chicken, add the shredded cheese, eggs, mayonnaise, flour, minced garlic, chopped dill, salt, and pepper. Stir everything together until well combined.
  3. Rest (Optional): Let the mixture sit for about 10 minutes. This helps the flavors meld and the flour absorb the moisture, making the fritters hold together better.
  4. Heat the Pan: Heat the oil in a large non-stick skillet over medium heat. You want the oil hot enough so the fritters sizzle gently when they hit the pan.
  5. Cook the Fritters: Use a large spoon or an ice cream scoop to drop mounds of the chicken mixture into the skillet. Slightly flatten the tops with the back of your spoon to form patties.
  6. Fry Until Golden: Cook for about 4 to 5 minutes on the first side until a golden-brown crust forms. Flip carefully and cook for another 4 minutes on the other side, ensuring the chicken is completely cooked through.
  7. Drain and Serve: Remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil.

Serve It With

Garnish with fresh dill just like in the photo. They pair perfectly with a side of garlic herb dipping sauce, sour cream, or a fresh green salad!
