- 3 cups mashed potatoes (leftover or freshly made, cooled)
- 1 large egg
- ½ cup shredded cheddar cheese (optional)
- ¼ cup all-purpose flour
- ¼ cup breadcrumbs
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- Cooking spray
Instructions
1. Prepare the Potato Mixture
- In a large bowl, combine mashed potatoes, egg, cheese, flour, breadcrumbs, green onions, garlic, onion powder, garlic powder, parsley, salt, and pepper.
- Mix until everything is well combined and the mixture holds together.
2. Shape the Potato Cakes
- Divide the mixture into small portions and shape into round patties about ½-inch thick.
- Lightly coat both sides with breadcrumbs for extra crispiness.
3. Air Fry the Potato Cakes
- Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
- Spray the air fryer basket with cooking spray.
- Place potato cakes in a single layer.
- Lightly spray the tops with oil.
- Air fry for 12–15 minutes, flipping halfway through, until golden brown and crispy.
4. Serve
- Serve hot with sour cream, ranch dressing, garlic aioli, or a spicy dipping sauce.
- Garnish with fresh parsley or extra green onions.
Tip: Chilling the potato mixture for 20–30 minutes before shaping helps the cakes hold their shape and become extra crispy in the air fryer.
