Ingredients

  • 3 cups mashed potatoes (leftover or freshly made, cooled)
  • 1 large egg
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup all-purpose flour
  • ¼ cup breadcrumbs
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • Cooking spray

Instructions

1. Prepare the Potato Mixture

  • In a large bowl, combine mashed potatoes, egg, cheese, flour, breadcrumbs, green onions, garlic, onion powder, garlic powder, parsley, salt, and pepper.
  • Mix until everything is well combined and the mixture holds together.

2. Shape the Potato Cakes

  • Divide the mixture into small portions and shape into round patties about ½-inch thick.
  • Lightly coat both sides with breadcrumbs for extra crispiness.

3. Air Fry the Potato Cakes

  • Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
  • Spray the air fryer basket with cooking spray.
  • Place potato cakes in a single layer.
  • Lightly spray the tops with oil.
  • Air fry for 12–15 minutes, flipping halfway through, until golden brown and crispy.

4. Serve

  • Serve hot with sour cream, ranch dressing, garlic aioli, or a spicy dipping sauce.
  • Garnish with fresh parsley or extra green onions.

Tip: Chilling the potato mixture for 20–30 minutes before shaping helps the cakes hold their shape and become extra crispy in the air fryer.
