Crispy Potato Cakes (Air Fryer)

Crispy Potato Cakes (Air Fryer)

These air fryer potato cakes are golden, crispy on the outside, and soft and tender inside. They taste like a mix between hash browns and pan-fried potato patties—but without deep frying. Perfect as a breakfast side, snack, or even a base for eggs or smoked salmon.

The key to getting that restaurant-style crispiness is removing excess moisture from the potatoes and using a light binder so the cakes hold together. The air fryer then does the work of creating that crunchy, golden crust.

Ingredients

  • 3 medium russet potatoes (or about 2½ cups shredded)
  • 1 large egg
  • 2 tablespoons all-purpose flour (or cornstarch for extra crispiness)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1–2 tablespoons grated Parmesan cheese (optional, for flavor)
  • Cooking spray or light oil spray

Instructions

  1. Shred the potatoes
    • Use a box grater or food processor.
  2. Remove moisture (important step)
    • Place shredded potatoes in a clean towel and squeeze out as much liquid as possible.
  3. Mix ingredients
    • In a bowl, combine potatoes, egg, flour, salt, pepper, and seasonings.
  4. Form patties
    • Shape into small flat rounds, about 1/2 inch thick.
  5. Preheat air fryer
    • Set to 375°F (190°C) for 3–5 minutes.
  6. Air fry
    • Lightly spray basket and tops of patties with oil.
    • Cook for 10–14 minutes, flipping halfway through.
  7. Finish crisping
    • Cook until deep golden brown and crispy edges form.
