Crispy Potato Pancakes

Ingredients

  • 4 medium russet potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying
  • Butter for serving (optional)

Instructions

  1. Grate the potatoes and onion using the large holes of a box grater.
  2. Place the mixture in a clean kitchen towel and squeeze out as much liquid as possible.
  3. Transfer to a bowl and mix with eggs, flour, salt, and pepper.
  4. Heat about 1/4 inch (6 mm) of oil in a skillet over medium-high heat.
  5. Scoop about 1/4 cup of the mixture per pancake into the skillet and flatten gently.
  6. Fry for 3–4 minutes per side until golden brown and crispy.
  7. Drain on paper towels.
  8. Serve hot with butter, sour cream, applesauce, or your favorite topping.

If These Are Rice Cakes Instead

Ingredients

  • 3 cups cooked rice
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup flour
  • Salt and pepper to taste
  • Oil for frying

Mix ingredients, form patties, and fry until golden brown on both sides.
