Ingredients
- 4 medium russet potatoes, peeled
- 1 small onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil for frying
- Butter for serving (optional)
Instructions
- Grate the potatoes and onion using the large holes of a box grater.
- Place the mixture in a clean kitchen towel and squeeze out as much liquid as possible.
- Transfer to a bowl and mix with eggs, flour, salt, and pepper.
- Heat about 1/4 inch (6 mm) of oil in a skillet over medium-high heat.
- Scoop about 1/4 cup of the mixture per pancake into the skillet and flatten gently.
- Fry for 3–4 minutes per side until golden brown and crispy.
- Drain on paper towels.
- Serve hot with butter, sour cream, applesauce, or your favorite topping.
If These Are Rice Cakes Instead
Ingredients
- 3 cups cooked rice
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup flour
- Salt and pepper to taste
- Oil for frying
Mix ingredients, form patties, and fry until golden brown on both sides.
