INGREDIENTS:
- 2 cups (60 g) fresh spinach, finely chopped and thoroughly dried
- 8 oz (225 g) cream cheese, softened
- 1 cup (115 g) shredded mozzarella cheese
- Β½ cup (50 g) freshly grated Parmesan cheese
- 1 cup (115 g) shredded cheddar cheese
- 1 teaspoon garlic powder
- Β½ teaspoon onion powder
- Β½ teaspoon salt
- ΒΌ teaspoon black pepper
- ΒΌ teaspoon red pepper flakes, optional
- 1 tablespoon fresh parsley, chopped, optional
DIRECTIONS:
- Preheat the oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- Finely chop the spinach and press it thoroughly between paper towels to remove excess moisture.
- In a large bowl, combine the softened cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
- Fold in the dried spinach until evenly distributed.
- Scoop the mixture into small portions and place them about 2 inches apart on the prepared baking sheet.
- Flatten each portion slightly into a round shape.
- Sprinkle shredded cheddar over each bite.
- Bake for 15β20 minutes, until the cheese is bubbling and the edges are golden brown.
- Let the bites rest on the baking sheet for about 5 minutes so they firm up.
