Diabetic bread recipe

Makes: 12 slices

Ingredients

  • 2 cups almond flour
  • ½ cup ground flaxseed
  • ¼ cup psyllium husk powder
  • 1 tbsp baking powder
  • ½ tsp salt
  • 5 large eggs
  • ¼ cup olive oil or melted butter
  • ½ cup warm water
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a small loaf pan with parchment paper.
  3. Mix almond flour, flaxseed, psyllium husk, baking powder, and salt.
  4. In a separate bowl, whisk eggs, oil, water, and vinegar.
  5. Combine wet and dry ingredients. The mixture will thicken quickly.
  6. Transfer to the loaf pan and smooth the top.
  7. Bake for 45–55 minutes, until golden brown and firm.
  8. Cool completely before slicing.

Higher-Protein Version

To increase protein:

  • Reduce almond flour to 1½ cups.
  • Add ½ cup unflavored whey protein isolate.
  • Add 2 extra egg whites.
