Grilled Chicken with Garlic Parmesan Cream Sauce

Ingredients

For the Chicken:

  • 2 large (about 1.5 lbs) boneless, skinless chicken breasts, sliced horizontally into 4 thin cutlets
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and fresh black pepper, to taste

For the Garlic Parmesan Cream Sauce:

  • 2 tbsp unsalted butter
  • 4 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup freshly grated Parmesan cheese
  • 1 tbsp fresh parsley, finely chopped
  • Salt and black pepper, to taste

For Serving (Optional):

  • Steamed broccoli florets
  • White rice, quinoa, or roasted potatoes

Instructions

1. Season & Grill the Chicken

  1. Pat the chicken cutlets dry with paper towels. Rub both sides evenly with olive oil, Italian seasoning, garlic powder, paprika, salt, and pepper.
  2. Heat a grill pan or skillet over medium-high heat.
  3. Add the chicken cutlets and grill for 4 to 6 minutes per side, or until nicely charred and cooked through (internal temperature reaches 165°F / 74°C).
  4. Transfer the chicken to a plate and cover loosely with foil to rest.

2. Make the Garlic Parmesan Cream Sauce

  1. Reduce the skillet heat to medium and melt the 2 tablespoons of butter.
  2. Add the minced garlic and sauté for 1 minute until fragrant (be careful not to burn it).
  3. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer for 3 to 4 minutes until slightly thickened.
  4. Reduce the heat to low and whisk in the grated Parmesan cheese until completely melted and smooth. Season with salt, pepper, and fresh parsley.

3. Assemble & Serve

  1. Slice the grilled chicken into strips.
  2. Arrange the chicken over a bed of fluffy white rice and steamed broccoli florets.
  3. Generously spoon the warm Garlic Parmesan Cream Sauce over the chicken and vegetables before serving!
