Healthy Oatmeal Apple Pancakes

Ingredients
- 1 1/2 cups rolled oats (or oat flour)
- 1 medium apple, peeled, cored, and finely grated (or blended)
- 1 large egg
- 1/2 cup milk (dairy or almond/oat milk)
- 1/2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tbsp honey or maple syrup
- Pinch of salt
- 1 tbsp butter or oil (for the skillet)
Instructions
- Blend or Mix the Batter: Place the rolled oats in a blender and pulse until ground into a coarse flour. Add the egg, milk, vanilla extract, ground cinnamon, baking powder, honey, and pinch of salt. Blend on medium speed until smooth.
- Fold in the Apple: Stir the finely grated apple into the batter using a spoon or spatula until evenly distributed.
- Heat the Skillet: Heat a non-stick skillet or griddle over medium-low heat. Add a tiny dab of butter or oil to lightly grease the surface.
- Cook the Pancakes: Scoop about 2–3 tablespoons of batter onto the hot skillet for each pancake, gently spreading it out slightly into a round disc. Cook for 2–3 minutes until small bubbles form on top and the edges look set.
- Flip & Golden Finish: Carefully flip the pancakes and cook for an additional 2 minutes until both sides are golden brown and cooked through in the middle.
- Serve: Stack on a plate and serve warm with a drizzle of maple syrup, extra cinnamon, or fresh apple slices.
