Ingredients (2–3 servings)
1 cup (225g) cottage cheese
2 large eggs
½ cup Greek yogurt (plain)
1 scoop (25–30g) vanilla whey protein powder
¼ cup rolled oats (optional, for texture)
1–2 tbsp honey or maple syrup (optional)
½ tsp vanilla extract
1 tsp baking powder
½ cup blueberries (fresh or frozen)
Pinch of salt
Optional:
Cinnamon (¼ tsp)
Lemon zest (for freshness)
Instructions
Preheat oven
180°C (350°F)
Blend the base
In a blender, mix:
cottage cheese + eggs + Greek yogurt + protein powder + vanilla
Blend until smooth (this removes lumps and makes it “cake-like”).
Add dry ingredients
Stir in oats, baking powder, salt, and optional cinnamon.
Add berries
Gently fold in blueberries (don’t overmix or they’ll break).
Bake
Pour into a greased small baking dish.
Bake for 25–35 minutes until set and lightly golden.
Cool & serve
Let it cool for 10–15 minutes before slicing (it firms up as it rests).
