HIGH-PROTEIN CHEESY COTTAGE CHEESE PIZZA

HIGH-PROTEIN CHEESY COTTAGE CHEESE PIZZA

QUICK DESCRIPTION

This high-protein crustless cottage cheese pizza is cheesy, golden, and incredibly satisfying — all protein, no flour, no carbs. It tastes like a molten cheese pan pizza, but it’s made with simple ingredients, packed with protein, and perfect for a quick lunch, dinner, or snack.

Ingredients

  • 1 cup cottage cheese (whole milk or low-fat)
  • 1 large egg
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Optional toppings: Mini pepperonis, sliced olives, crushed red pepper flakes, or a drizzle of marinara sauce for dipping.

Instructions

  1. Prep the Oven: Preheat your oven to 400°F (200°C) and line a small baking dish or skillet with parchment paper. Spray lightly with non-stick cooking spray.
  2. Blend the Base: Add the cottage cheese, egg, Italian seasoning, garlic powder, and salt into a blender or food processor. Blend until smooth and creamy.
  3. Assemble: Pour the blended mixture into your prepared pan, spreading it evenly into a thin layer.
  4. Top with Cheese: Evenly sprinkle the shredded mozzarella and grated Parmesan across the top, along with any desired low-carb toppings.
  5. Bake: Bake for 20–25 minutes until the edges are golden brown and the cheese on top is melted and nicely blistered.
  6. Broil & Set: Turn on the oven broil setting for 1–2 minutes to get a crisp, deeply browned top layer. Remove from the oven and let cool for 5 minutes to allow the cheese to set before slicing.
