Homemade Mexican Pizza

Homemade Mexican Pizza

Cook Time: 20 minutes


Ingredients

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • ½ cup water
  • 6 medium flour tortillas
  • 1 can (16 ounces) refried beans
  • 1 cup pizza sauce or enchilada sauce
  • 2 cups shredded Mexican cheese blend or cheddar
  • 1 tomato, diced
  • 2 green onions, sliced
  • Vegetable oil or cooking spray

Optional Toppings

  • Sour cream
  • Jalapeños
  • Black olives
  • Avocado
  • Salsa
  • Cilantro

Instructions

1. Cook the Beef

In a skillet over medium heat:

  • cook ground beef until browned

Drain excess grease.

Add:

  • taco seasoning
  • water

Simmer:

  • 3–5 minutes

until thickened.


2. Crisp the Tortillas

Preheat oven:

  • 400°F / 200°C

Lightly brush tortillas with oil or spray with cooking spray.

Bake directly on oven rack or baking sheet:

  • 3–5 minutes per side

until crispy and lightly golden.


3. Warm the Beans

Heat refried beans in a saucepan or microwave until spreadable.


4. Assemble the Mexican Pizzas

On one crispy tortilla spread:

  • refried beans
  • seasoned beef

Top with a second tortilla.

Spread sauce on top tortilla.

Sprinkle with:

  • shredded cheese
  • tomatoes
  • green onions

5. Bake

Bake:

  • 8–10 minutes

until cheese is melted and bubbly.


6. Serve

Slice like pizza and add favorite toppings.

Best served hot and crispy.


Optional Low-Carb Version

Replace flour tortillas with:

  • low-carb tortillas

or make a bowl version without tortillas.


Extra Protein Version

Add:

  • extra lean beef
  • shredded chicken
  • extra cheese
  • Greek yogurt instead of sour cream
