Keto Gooey Butter Cake

Keto Gooey Butter Cake

Rich, creamy, and irresistibly decadent, this Keto Gooey Butter Cake is a low-carb version of the classic Southern dessert. It features a soft buttery almond flour crust topped with a smooth cream cheese filling that bakes into a gooey cheesecake-like layer. Every bite melts in your mouth with sweet vanilla flavor, buttery richness, and a soft custard-style center while staying keto-friendly and sugar-free.

This dessert is perfect for anyone following a ketogenic or low-carb lifestyle who still wants a truly indulgent treat. Traditional gooey butter cake is loaded with sugar and flour, but this keto version uses almond flour and keto sweeteners like erythritol or monk fruit to keep carbs low while preserving the dessert’s signature texture and flavor. The result is a rich dessert that feels luxurious without the sugar crash.

One of the best things about this recipe is its versatility and ease of preparation. The cake comes together with simple ingredients and can be baked in the air fryer or oven. The cream cheese topping forms a silky, gooey layer over the buttery crust, creating a dessert somewhere between cheesecake, butter cake, and custard bars. You can also customize it with lemon zest, cinnamon, chocolate chips, or pecans for extra flavor.

Serve this keto gooey butter cake chilled or slightly warm with whipped cream or fresh berries for an elegant dessert that works for holidays, parties, or everyday keto cravings. Its rich texture means a small slice is deeply satisfying, making it a perfect make-ahead dessert for sharing or meal prep.
