Cheesy, crispy-edged pizza roll-ups with melty mozzarella, pepperoni, and Italian seasoning — all without traditional dough. Perfect for keto, low-carb snacks, lunches, or quick dinners.

Ingredients

Cheese “Crust”

  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Filling

  • 20–25 pepperoni slices
  • ½ cup pizza sauce
    (use low-carb or sugar-free sauce)
  • 1 cup shredded mozzarella
  • Optional:
    • cooked sausage
    • mushrooms
    • olives
    • jalapeños
    • bell peppers

Optional Garnish

  • fresh basil
  • red chili flakes
  • parmesan
  • garlic butter

Step 1: Preheat Oven

Preheat oven to:

  • 375°F (190°C)

Line baking tray with parchment paper.


Step 2: Make Cheese Base

In a bowl combine:

  • mozzarella
  • parmesan
  • Italian seasoning
  • garlic powder
  • black pepper

Step 3: Form Cheese Circles

Scoop small portions onto parchment.

Spread into thin circles:

  • about 4–5 inches wide

Leave space between each.


Step 4: Bake the Cheese

Bake for:

  • 5–7 minutes

Until:

  • melted
  • bubbling
  • edges lightly golden

Important

You want them flexible, not fully crisp yet.


Step 5: Add Fillings

Remove tray from oven.

Add to each cheese round:

  1. small spoon pizza sauce
  2. mozzarella
  3. pepperoni
  4. optional toppings

Do not overfill.


Step 6: Roll Them Up

While still warm:

  • carefully roll each into log shape

Place seam-side down.


Step 7: Final Bake

Return to oven for:

  • 4–6 minutes

Until:

  • cheese melts fully
  • roll-ups become golden
  • edges crisp slightly

Step 8: Finish & Serve

Optional finishing:

  • brush garlic butter
  • sprinkle parmesan
  • add basil or chili flakes

Cook cheese rounds at:

  • 375°F (190°C) for 4–5 minutes

Roll and cook:

  • another 2–3 minutes
