🧀 Ingredients

For the chicken:

  • 2 medium chicken breasts (cut into small cubes or thin strips)
  • 1½ tbsp olive oil or butter
  • 1½ tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • Optional: pinch of cayenne for extra heat

For Alfredo sauce:

  • 1 tbsp butter
  • 2 cloves garlic (minced)
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste
  • Optional: pinch of Italian seasoning

For pizza rolls:

  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • ¾ cup almond flour (or coconut flour 3–4 tbsp as substitute)
  • 1 egg
  • ½ tsp baking powder
  • Pinch of salt

Toppings inside rolls:

  • Cooked Cajun chicken
  • Alfredo sauce
  • ½ cup shredded mozzarella (extra for gooey filling)

🔥 Instructions

1. Make the Cajun Blackened Chicken

  • Heat olive oil or butter in a pan over medium-high heat.
  • Add chicken pieces and season with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.
  • Cook until chicken is browned, slightly crispy on edges, and fully cooked (6–8 minutes).
  • Set aside.

2. Prepare Alfredo Sauce

  • In the same pan, melt butter and sauté garlic for 30–60 seconds.
  • Pour in heavy cream and simmer for 2–3 minutes.
  • Add Parmesan cheese and stir until smooth and creamy.
  • Season with salt, pepper, and optional Italian seasoning.
  • Turn off heat and set aside.

3. Make Low-Carb Dough

  • In a microwave-safe bowl, melt mozzarella and cream cheese together (about 30–60 seconds).
  • Mix until smooth and stretchy.
  • Add almond flour, egg, baking powder, and salt.
  • Mix into a soft dough (knead lightly with hands while warm).

4. Assemble Pizza Rolls

  • Roll dough between parchment paper into a rectangle.
  • Spread a thin layer of Alfredo sauce.
  • Add Cajun chicken and a sprinkle of mozzarella cheese.
  • Carefully roll it like a log or wrap style.
  • Slice into bite-sized rolls.

5. Bake

  • Preheat oven to 375°F (190°C).
  • Place rolls on a parchment-lined baking tray.
  • Bake for 15–18 minutes or until golden and crispy.
  • Optional: brush with melted butter for extra shine.

6. Serve

  • Drizzle extra Alfredo sauce on top.
  • Garnish with parsley and a pinch of Cajun seasoning.
