Low-Carb Cranberry Feta Pinwheels with Cream Cheese

These festive pinwheels combine tangy feta, creamy cream cheese, and sweet-tart cranberries in a low-carb wrap. They’re perfect for parties, holiday gatherings, meal prep, or as an easy appetizer.

Yield

  • 24–30 pinwheels
  • Serves 8–10 as an appetizer

Preparation Time

  • Prep: 15 minutes
  • Chill: 1 hour
  • Total: 1 hour 15 minutes

Ingredients

For the filling

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (150 g) feta cheese, crumbled
  • ½ cup (60 g) dried cranberries, finely chopped
  • 2 green onions, finely sliced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

For the wraps

  • 4 large low-carb tortillas (8–10 inches each)

Optional additions

  • ¼ cup chopped pecans or walnuts
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh chives
  • Handful of baby spinach leaves

Instructions

Step 1: Prepare the filling

  1. Place the softened cream cheese in a medium bowl.
  2. Beat with a spoon or hand mixer until smooth and fluffy.
  3. Add:
    • Crumbled feta
    • Chopped cranberries
    • Green onions
    • Parsley
    • Dill (if using)
    • Garlic powder
    • Black pepper
  4. Mix thoroughly until evenly combined.

Step 2: Prepare the tortillas

  1. Lay the low-carb tortillas flat on a clean work surface.
  2. If they are stiff, warm them in the microwave for 10–15 seconds to make rolling easier.

Step 3: Spread the filling

  1. Divide the filling evenly among the tortillas.
  2. Spread it in a thin, even layer over each tortilla.
  3. Leave about ½ inch (1 cm) uncovered around the edges.

Step 4: Roll tightly

  1. Starting from one edge, roll each tortilla into a tight log.
  2. Press gently as you roll to prevent air pockets.
  3. Wrap each log tightly in plastic wrap.

Step 5: Chill

  1. Refrigerate for at least 1 hour.
  2. Chilling helps the filling firm up and makes slicing easier.

Step 6: Slice

  1. Remove the plastic wrap.
  2. Trim about ½ inch from each end.
  3. Slice each roll into ¾-inch thick pinwheels.

Arrange on a serving platter.

Make-Ahead Instructions

  • Prepare up to 24 hours in advance.
  • Store wrapped rolls in the refrigerator.
  • Slice just before serving for the freshest appearance.

Storage

  • Refrigerate in an airtight container for up to 3 days.
  • Not recommended for freezing, as the cream cheese texture may change.
