Ingredients

Chicken

  • 500 g chicken breast or thighs, sliced into strips
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • ½ tsp turmeric (optional)
  • ½ tsp chili flakes (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Hummus Base

  • 2 cups hummus (store-bought or homemade)
  • 1 tbsp olive oil (for drizzling)
  • 1 tsp lemon juice
  • ½ tsp paprika or sumac (for garnish)

Fresh Toppings

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ½ cup feta cheese (or vegan feta)
  • Fresh parsley, chopped
  • Fresh mint (optional)

Optional Extras

  • Pickled red onions
  • Roasted chickpeas
  • Chili flakes
  • Tahini drizzle
  • Warm pita or flatbread

Instructions

1. Marinate the chicken

In a bowl mix:

  • olive oil
  • lemon juice
  • garlic
  • paprika
  • cumin
  • oregano
  • turmeric
  • chili flakes
  • salt
  • pepper

Add chicken and coat well.

Marinate:

  • at least 20–30 minutes
  • best: 2–4 hours in the fridge

2. Cook the chicken

Heat a skillet or grill pan over medium-high heat.

Cook chicken:

  • 6–8 minutes total

until:

  • golden brown
  • cooked through
  • slightly charred on edges

Set aside to rest.


3. Prepare hummus base

Spread hummus onto a large serving platter.

Use the back of a spoon to create a swirl or shallow well in the center.

Drizzle with:

  • olive oil
  • lemon juice
  • paprika or sumac

4. Assemble platter

Layer cooked chicken over the hummus.

Arrange toppings around and over the chicken:

  • cucumber
  • tomatoes
  • onions
  • olives
  • feta
  • herbs

Add optional extras if using.


5. Finish & serve

Drizzle with:

  • tahini (optional)
  • olive oil
  • chili flakes

Serve immediately with:

  • warm pita
  • flatbread
  • or naan
