Mediterranean Crispy Spinach & Lentil Stuffed Flatbreads

Golden, crispy flatbreads stuffed with spiced lentils, garlicky spinach, and Mediterranean herbs—hearty, high-fiber, and incredibly satisfying.


🧾 Ingredients (Makes 4–6 flatbreads)

🫓 Dough (soft + crispy base)

  • 2 cups all-purpose flour (or whole wheat flour)
  • ¾ cup warm water (adjust as needed)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp baking powder (optional for softness)

🥬 Spinach filling

  • 3 cups fresh spinach (chopped)
  • 3–4 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • ½ tsp chili flakes (optional)
  • ½ tsp dried oregano

🥣 Lentil filling

  • 1 cup cooked brown or green lentils
  • 1 small onion (finely chopped)
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • ½ tsp smoked paprika
  • ½ tsp coriander powder
  • Salt & pepper to taste
  • 1 tbsp lemon juice 🍋

🧀 Optional add-ins (for extra flavor)

  • ¼ cup feta cheese (or vegan feta)
  • Fresh parsley or dill
  • Yogurt or tahini for serving

🔥 Instructions

1. Prepare the dough

  • In a bowl, mix flour, salt, and baking powder.
  • Add warm water and olive oil gradually.
  • Knead for 6–8 minutes until soft and smooth.
  • Cover and rest for 20–30 minutes.

2. Cook lentil filling

  • Heat olive oil in a pan.
  • Add onion and sauté until soft.
  • Add cooked lentils, cumin, paprika, coriander, salt, and pepper.
  • Cook for 3–4 minutes, then finish with lemon juice.
  • Set aside to cool slightly.

3. Cook spinach filling

  • In a pan, heat olive oil and garlic.
  • Add spinach and cook until wilted (2–3 minutes).
  • Season with salt, pepper, oregano, and chili flakes.
  • Remove excess moisture if needed.

4. Assemble flatbreads

  • Divide dough into 4–6 equal balls.
  • Roll each into a thin circle.
  • Add spinach + lentil filling in the center.
  • Optional: add feta for creaminess.
  • Fold into half-moon or seal like a stuffed pocket.
  • Press edges firmly.

5. Cook until crispy

Pan-fry method (best results):

  • Heat a skillet with a little olive oil.
  • Cook each flatbread 3–4 minutes per side until golden and crispy.

Air fryer method:

  • Lightly brush with oil.
  • Air fry at 180°C (360°F) for 8–10 minutes.

6. Serve

  • Slice and serve warm with yogurt, garlic dip, or tahini sauce.
  • Garnish with fresh herbs and lemon wedges.
