Ingredients
Burger Meat
- 1 lb (450 g) lean ground beef (90–93% lean)
- 1 tsp olive oil
- 1 tsp Worcestershire sauce
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Mushrooms
- 12 oz (340 g) cremini or white mushrooms, sliced
- 1 tbsp butter or olive oil
- 2 cloves garlic, minced
- ¼ tsp salt
- ¼ tsp black pepper
Bowl Base
Choose one:
- 6 cups chopped romaine lettuce
- 4 cups shredded iceberg lettuce
- 4 cups cauliflower rice
- Mixed greens
Swiss Cheese Sauce (Optional)
- 1 cup shredded Swiss cheese
- ¼ cup milk
- 1 tsp Dijon mustard
OR
- 4 slices Swiss cheese, cut into strips
Burger Sauce
- ¼ cup light mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp sugar-free ketchup
- 1 tsp pickle juice
Toppings
- Dill pickle slices
- Red onion, thinly sliced
- Cherry tomatoes
- Fresh parsley
- Cracked black pepper
Step 1: Prepare the Burger Meat
In a bowl combine:
- ground beef
- Worcestershire sauce
- garlic powder
- onion powder
- salt
- pepper
Mix gently.
Avoid overmixing, which can make the meat tough.
Step 2: Cook the Beef
Heat a large skillet over medium-high heat.
Add olive oil.
Cook the beef, breaking it into crumbles.
Cook for 7–8 minutes until browned and fully cooked.
Drain excess fat if desired.
Set aside and keep warm.
Step 3: Sauté the Mushrooms
Using the same skillet:
- Add butter or olive oil.
- Add mushrooms in a single layer.
- Cook 5–7 minutes without stirring too often.
- Add garlic, salt, and pepper.
- Cook another minute.
The mushrooms should be deeply browned and flavorful.
Step 4: Make the Swiss Cheese Sauce (Optional)
In a small saucepan:
- Heat milk over low heat.
- Gradually add Swiss cheese.
- Stir continuously until smooth.
- Add Dijon mustard.
Keep warm.
If you prefer, simply use sliced Swiss cheese instead.
Step 5: Make the Burger Sauce
Whisk together:
- mayonnaise
- Dijon mustard
- ketchup
- pickle juice
Taste and adjust seasoning if needed.
Step 6: Assemble the Bowls
Divide the lettuce or cauliflower rice among 4 bowls.
Top each bowl with:
- Cooked burger meat
- Sautéed mushrooms
- Swiss cheese or cheese sauce
- Pickles
- Red onions
- Tomatoes
Drizzle with burger sauce.
Step 7: Garnish
Finish with:
- fresh parsley
- cracked black pepper
