No-Bake Cherry Cheesecake Graham Bites

Ingredients

Graham Base

  • 200 g graham crackers (or digestive biscuits)
  • 80 g butter, melted (or coconut oil for dairy-free option)

Cheesecake Filling

  • 250 g cream cheese, softened
  • 200 ml whipping cream (cold)
  • 80 g powdered sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for freshness)

Cherry Topping

  • 1 can cherry pie filling
    (or homemade cherry compote below)

Homemade Cherry Topping (optional)

  • 250 g cherries (fresh or frozen)
  • 2–3 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 2 tbsp water

Instructions

1. Prepare the graham base

Crush graham crackers into fine crumbs using:

  • food processor or rolling pin

Mix crumbs with melted butter until it looks like wet sand.

Press firmly into a lined square tray (20×20 cm or similar).

Refrigerate:

  • 20–30 minutes to set

2. Make cheesecake filling

In a bowl, beat cream cheese until smooth.

Add:

  • powdered sugar
  • vanilla
  • lemon juice

Mix until creamy.


3. Whip cream

In a separate cold bowl, whip cream until:

  • soft to medium peaks

Gently fold whipped cream into cream cheese mixture.

Do not overmix—keep it fluffy.


4. Assemble layer

Spread cheesecake filling evenly over chilled graham base.

Smooth the top.


5. Add cherry topping

Spoon cherry pie filling evenly over cheesecake layer.

Spread gently without mixing layers.


6. Chill

Refrigerate for:

  • 4–6 hours (best overnight)

until firm enough to slice cleanly.


7. Slice into bites

Lift out using parchment paper.

Cut into:

  • small squares or bite-sized bars

Wipe knife between cuts for clean edges.
