No-Bake Chocolate Chia Coconut

Ingredients

  • 1 cup rolled oats
  • 1/3 cup peanut butter (or almond butter)
  • 2 tablespoons cocoa powder (unsweetened)
  • 2 tablespoons chia seeds
  • 1/3 cup shredded coconut (plus extra for coating, optional)
  • 2–3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk (as needed)

👩‍🍳 Instructions

  1. Mix dry ingredients
    In a bowl, combine oats, cocoa powder, chia seeds, and shredded coconut.
  2. Add wet ingredients
    Stir in peanut butter, honey, and vanilla extract.
  3. Adjust texture
    Add milk 1 tablespoon at a time until the mixture is sticky and holds together.
  4. Form balls
    Roll into small bite-sized drops using your hands.
  5. Coat (optional)
    Roll in extra shredded coconut for added texture.
  6. Chill
    Refrigerate for 20–30 minutes to set.

  • Freezer: up to 2 months
