Ingredients
- 2 cups (180g) rolled oats
- 3 ripe bananas
- 3 eggs
- ½ cup (120g) plain Greek yogurt
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Zest of 1 lemon (optional)
Optional Glaze
- ½ cup Greek yogurt
- 1–2 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Blend oats into a fine flour.
- Add bananas, eggs, yogurt, vanilla, baking powder, and salt. Blend until smooth.
- Pour into the loaf pan.
- Bake for 35–45 minutes, or until a toothpick comes out clean.
- Cool completely before slicing.
- Mix glaze ingredients and drizzle over the cake.

The batter takes about 5 minutes to prepare in a blender, though the cake still needs baking time.
