Ingredients
- 2 large apples (such as Honeycrisp, Gala, or Fuji), diced or thinly sliced
- 2 cups rolled oats (use certified gluten-free if needed)
- 1½ cups milk of choice (dairy, almond, or oat milk)
- 2 large eggs (or 2 flax eggs for a vegan option)
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract
- A pinch of salt
- (Optional) ⅓ cup chopped walnuts or pecans for extra crunch
Instructions
- Prep the Oven & Dish: Preheat your oven to 360°F (180°C). Lightly grease an 8×8-inch or equivalent baking dish with a bit of butter or coconut oil.
- Combine the Dry Ingredients: In a large bowl, mix the rolled oats, baking powder, ground cinnamon, and a pinch of salt.
- Whisk the Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and vanilla extract until smooth.
- Mix & Assemble: Pour the wet mixture over the dry oats and stir until evenly combined. Fold in the diced apples (and chopped nuts, if using).
- Bake: Transfer the mixture into your prepared baking dish, spreading it out evenly. Bake for 35 to 40 minutes, or until the center is set and the top is golden brown.
- Cool & Serve: Remove from the oven and let it cool for 5–10 minutes before slicing. Serve warm as is, or with a splash of milk or a dollop of Greek yogurt!
