Ingredients

  • 2 large apples (such as Honeycrisp, Gala, or Fuji), diced or thinly sliced
  • 2 cups rolled oats (use certified gluten-free if needed)
  • 1½ cups milk of choice (dairy, almond, or oat milk)
  • 2 large eggs (or 2 flax eggs for a vegan option)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt
  • (Optional) ⅓ cup chopped walnuts or pecans for extra crunch

Instructions

  1. Prep the Oven & Dish: Preheat your oven to 360°F (180°C). Lightly grease an 8×8-inch or equivalent baking dish with a bit of butter or coconut oil.
  2. Combine the Dry Ingredients: In a large bowl, mix the rolled oats, baking powder, ground cinnamon, and a pinch of salt.
  3. Whisk the Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and vanilla extract until smooth.
  4. Mix & Assemble: Pour the wet mixture over the dry oats and stir until evenly combined. Fold in the diced apples (and chopped nuts, if using).
  5. Bake: Transfer the mixture into your prepared baking dish, spreading it out evenly. Bake for 35 to 40 minutes, or until the center is set and the top is golden brown.
  6. Cool & Serve: Remove from the oven and let it cool for 5–10 minutes before slicing. Serve warm as is, or with a splash of milk or a dollop of Greek yogurt!
