Ingredients (Makes 4 quesadillas)
- 4 large flour tortillas
- 1½ cups shredded mozzarella cheese
- 20–24 pepperoni slices
- ½ cup pizza sauce (plus extra for dipping)
- ¼ cup shredded cheddar cheese (optional)
- 1 tsp Italian seasoning
- 1 tbsp chopped parsley
- 2 tbsp butter or olive oil
Optional Add-ins
- Sautéed mushrooms
- Bell peppers
- Black olives
- Jalapeños
- Cooked sausage
Instructions
1. Assemble the quesadillas
Lay tortillas flat.
Spread a thin layer of pizza sauce on one half of each tortilla.
Add:
- mozzarella cheese
- pepperoni slices
- cheddar cheese
- Italian seasoning
Fold tortillas in half.
2. Cook
Heat a skillet over medium heat.
Add a little butter or oil.
Cook each quesadilla for about:
- 2–3 minutes per side
Until:
- golden brown
- crispy outside
- melted cheese inside
Press lightly with a spatula while cooking.
3. Slice & Serve
Let rest 1 minute.
Cut into triangles.
Sprinkle with parsley.
Serve with warm pizza sauce or ranch dip.
Oven Method
Bake at 400°F (200°C) for:
- 8–10 minutes
Flip halfway for extra crispiness.
Air Fryer Method
Cook at 375°F (190°C) for:
- 5–6 minutes
Tips for Extra Crispy Quesadillas
- Use low-moisture mozzarella
- Don’t overfill
- Cook on medium heat so cheese melts before burning
- Brush outside lightly with garlic butter
Garlic Butter (Optional)
Mix:
- 2 tbsp melted butter
- 1 minced garlic clove
- pinch of parsley
