Ingredients

  • 700 g (1½ lb) pork belly, skin removed if desired, cut into 2.5 cm (1-inch) cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • ½ tsp chili flakes (optional)
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce or coconut aminos

Optional High-Protein Garlic Yogurt Dip

  • ¾ cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

Oven Method

  1. Preheat oven to 220°C (425°F).
  2. Pat the pork belly cubes dry with paper towels.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, paprika, salt, pepper, chili flakes, vinegar, and soy sauce.
  4. Toss pork belly cubes until evenly coated.
  5. Arrange on a wire rack over a baking tray, leaving space between pieces.
  6. Roast for 30–40 minutes, turning once halfway through.
  7. For extra crispiness, broil/grill for 2–3 minutes at the end.

Air Fryer Method

  1. Preheat air fryer to 200°C (400°F).
  2. Place seasoned pork belly cubes in a single layer.
  3. Cook for 18–22 minutes, shaking the basket every 6–7 minutes.
  4. Cook until deeply browned and crispy.

Garlic Yogurt Dip

  1. Mix all dip ingredients together.
  2. Chill for 15 minutes before serving.
