Ingredients

  • 4 tbsp all-purpose flour (or almond flour for a low-carb version)
  • ½ tsp baking powder
  • 1 pinch of salt
  • 1 large egg
  • 1 tbsp melted butter (or olive oil/melted coconut oil)
  • 1 tbsp milk (dairy or plant-based)
  • (Optional) 1 tsp chia seeds, flaxseed, or sesame seeds for topping

Instructions

  1. Whisk Dry Ingredients: In a microwave-safe mug or small ramekin (preferably flat-bottomed), whisk together the flour, baking powder, and a pinch of salt until well combined.
  2. Add Wet Ingredients: Crack in the egg, then add the melted butter and milk. Whisk thoroughly with a fork, scraping the bottom edges of the mug to make sure no dry flour remains.
  3. Smooth & Top: Smooth the top of the batter with a spoon. Sprinkle optional seeds on top if desired.
  4. Microwave: Microwave on HIGH for 60 to 90 seconds (1000W microwaves usually take 70 seconds). The bread will rise above the rim and set firmly to the touch.
  5. Cool & Slice: Let it cool for 1 minute in the mug. Run a knife around the inner edge, invert the mug, and slide the bread out. Slice in half horizontally to make 2 round sandwich slices!

Tips & Variations

  • Toast It: For an authentic toasted texture, pop your sliced mug bread rounds into a toaster or sear them in a skillet with a bit of butter for 1–2 minutes until golden.
  • Garlic Herb Twist: Add a pinch of garlic powder and dried Italian herbs to the batter before cooking for a savory garlic mug bread.
