🧁 Savory Meatloaf Cupcakes with Mashed Potato Frosting
A fun twist on classic meatloaf—juicy mini meatloaves topped with creamy mashed potatoes and a sweet-tangy glaze.

Ingredients
Meatloaf
- 1½ lbs ground beef
- ½ cup breadcrumbs
- ½ cup finely diced onion
- 1 large egg
- 2 tbsp milk
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Mashed Potato Frosting
- 3 large russet potatoes, peeled and quartered
- 3 tbsp butter, melted
- ¼ cup warm milk or cream
- ½ cup shredded cheddar, optional
- Salt and pepper, to taste
Glaze
- ½ cup BBQ sauce or ketchup
- 2 tbsp brown sugar
- 1 tsp Dijon mustard
- Fresh parsley or chives, for garnish
Directions
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin pan.
- Boil potatoes in salted water for 15–20 minutes until tender. Drain and mash with butter, warm milk, salt, pepper, and cheddar. Set aside.
- Mix ground beef, breadcrumbs, onion, egg, milk, Worcestershire sauce, and seasonings until just combined. Divide among the muffin cups.
- Mix BBQ sauce, brown sugar, and Dijon. Spoon about 1 tablespoon over each meatloaf.
- Bake for 20–25 minutes, until the meat reaches 160°F (71°C).
- Pipe or spoon the mashed potatoes on top like frosting. Drizzle with extra glaze and garnish with parsley or chives.
