Slow-Cooked Pot Roast with Gravy Over Creamy Mashed Potatoes

A comforting classic with tender, juicy beef, rich gravy, and creamy mashed potatoes. This version adapts the slow-cooked flavor into an air fryer-friendly pressure/covered cooking style using an air fryer-safe dish.

Ingredients

For the Pot Roast

  • 1.5 kg (3–4 lb) chuck roast
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 3 carrots, cut into chunks
  • 2 celery stalks, sliced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves

For Creamy Mashed Potatoes

  • 1 kg (2 lb) potatoes, peeled and cubed
  • 4 tbsp butter
  • ½–¾ cup warm milk or cream
  • ½ cup sour cream (optional)
  • Salt and black pepper, to taste

For the Gravy

  • 3 tbsp cooking liquid from the roast
  • 2 tbsp cornstarch
  • 3 tbsp cold water

Instructions

Step 1: Season the Roast

  1. Pat the roast dry.
  2. Rub with:
    • Salt
    • Pepper
    • Garlic powder
    • Paprika
    • Thyme
    • Rosemary

Step 2: Brown the Meat (Optional but Recommended)

  1. Preheat air fryer to 200°C (390°F).
  2. Place the roast in the basket.

Air Fry:

  • 8–10 minutes, turning halfway, until lightly browned.

Step 3: Slow Cook the Roast in Air Fryer

  1. Place onion, garlic, carrots, and celery in an air fryer-safe deep baking dish.
  2. Put the roast on top.
  3. Add:
    • Beef broth
    • Tomato paste
    • Worcestershire sauce
    • Bay leaves
  4. Cover tightly with foil.

Cook:

  • 160°C (320°F) for 2–2½ hours
  • Turn the roast halfway through if possible.
  • The beef should be fork-tender.

Step 4: Make Creamy Mashed Potatoes

  1. Boil potatoes until soft (about 15–20 minutes).
  2. Drain well.
  3. Mash with:
    • Butter
    • Warm milk/cream
    • Sour cream
    • Salt and pepper

Mix until smooth and creamy.


Step 5: Make the Gravy

  1. Strain the cooking liquid from the roast.
  2. Heat it in a saucepan.
  3. Mix cornstarch with cold water.
  4. Stir into the hot liquid and simmer until thickened.

Serve

  1. Spoon creamy mashed potatoes onto a plate.
  2. Add slices of tender pot roast.
  3. Pour rich gravy over the top.
  4. Serve with the cooked carrots and vegetables.
