Soft and Buttery Homemade Rolls

Makes: 8 rolls

Ingredients

  • 1½ cups almond flour
  • ½ cup whey protein isolate (unflavored or plain)
  • 2 tbsp psyllium husk powder
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup shredded mozzarella cheese
  • 2 oz (60 g) cream cheese
  • 2 large eggs
  • 2 egg whites
  • 2 tbsp melted butter

For Brushing

  • 1 tbsp melted butter
  • Optional: sesame seeds, poppy seeds, or garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, mix almond flour, protein powder, psyllium husk, baking powder, and salt.
  4. In a microwave-safe bowl, combine mozzarella and cream cheese. Heat in 30-second intervals until melted and smooth.
  5. Add the melted cheese mixture, eggs, egg whites, and butter to the dry ingredients.
  6. Mix until a soft dough forms. If sticky, let it sit for 2–3 minutes.
  7. Divide into 8 equal portions and shape into rolls.
  8. Place on the baking sheet and brush with melted butter.
  9. Sprinkle with seeds if desired.
  10. Bake for 18–22 minutes, until golden brown.
  11. Brush with a little more butter immediately after baking.
